Ingredients

  • 220g Flour
  • 1 tsp Baking Powder
  • 90g Walnuts
  • 90g White Chocolate Chips
  • 140g Oatmeal (coarse)
  • 150g Kerrygold Pure Irish Salted Butter
  • 180g Brown Sugar
  • 1 Vanilla Pod (scraped seeds)
  • 1 pinch Salt
  • 1 tsp Ginger Spice
  • 1 Egg (medium)
  • 45g Milk

Directions


Line baking sheets with grease-proof paper.

Now sift the flour and baking powder into a bowl. Mix in the walnuts, chocolate chips and oatmeal into the flour mixture.

Warm the butter to soften it (not melted), then add in the sugar, vanilla pod seeds and salt. Whisk the mixture until fluffy. Fold in the egg and milk.

Add the remaining ingredients and knead into a pastry. Form regularly shaped balls from the pastry, place them on the baking sheets leaving a large space between them and press down lightly.

Bake at 190°C circulating air for 10-15 minutes depending on the size of the cookies.
