Ingredients

  • 125g Kerrygold Pure Irish Salted Butter
  • 125g caster sugar
  • 1 egg (M)
  • 1/2 tsp vanilla extract
  • 250g plain flour
  • 1/4 tsp ground cinnamon
  • 20 mixed boiled/glucose flavoured sweets
  • 100g dark chocolate (melted)
  • Sprinkles

Directions

This recipe makes 20 of Shane Smith's stain glass window cookies.
  1. Preheat your oven to 170C
  2. Line two trays with parchment paper and set aside
  3. In a mixing bowl, cream the room temperature Kerrygold butter, sugar and vanilla together until you get a creamy and pale consistency
  4. Next, add in the egg and mix
  5. Finally, mix in the flour & cinnamon
  6. Once combined, wrap the dough in cling film and chill for one hour
  7. Once rested, on a floured surface roll out the dough to a thickness of 1cm and cut into desired Christmas shapes
  8. Taking a small similar cutter, cut out the center of each cookie and place them on a lined baking sheet
  9. Place a sweet into the center of each cookie and place in a preheated oven and bake for 10 minutes or until golden brown
  10. Once baked, remove from the oven and allow to cool completely on a wire tray
  11. Decorate as you so wish with piped melted chocolate & sprinkles
